Family Pictures

Craig is leaving for his internship soon so I made the family get some pictures today.  Who knows when the next chance for those will be.  We headed straight to the yard after church.  No Easter candy until after pictures was REALLY hard for the kids but we got through it and I thought they turned out really cute.
I sure have a good looking family!

I am married to such a goofball! :)

Easter Everything

We went to the city egg hunt yesterday morning.  I was kind of disappointed. They did it at the professional baseball stadium here.... that part was cool but they just threw candy and had like 5 plastic eggs that held prizes for over 300 kids. Jace ran as hard as he could towards the blue plastic egg and just missed it.  Then he tried to find another plastic one.  In the mean time he forgot to pick up any candy.  He came back crying.  Oh well, he cheered right up when we look them to the dollar store to pick something out from the money they found the eggs Nani & Grandpa sent in the mail.

FINALLY!! Someone invented a no spill egg dye set. It didn't work as well as I had hoped but we had significantly less stained fingers this year.  My munchkins had tons of fun turning their hard boiled eggs yellow, pink, blue, purple, and green.  I even joined in the fun. I love holidays with kids. They make everything so much more fun.  Last night Jace kept telling Brooke that she needed to get into bed quick because he heard a "hop hop hop" right outside. What else did Brooke say the other day that had Craig and I cracking up?? Oh yeah, I had asked her if she had eaten her sandwich since she was munching on candy. She lowered her head and said "Nope, I left it outside for the ants." Craig and I looked at each other and started laughing. She says the most random things.

Jace wanted to write his name on all of his eggs and Brooke dyed all of hers pink. :)

Jace & Brooke with their Easter baskets at 6:30 AM.
The Easter bunny did find us this year.  Mommy & Daddy were REALLY tired when Jace woke us up at 6:30AM since we had been up until 4AM working on a last minute final project for Craig's class.  Finals is upon us.  He should be done on Tues. Thank goodness!  Jace woke up Brooke and I followed them into the living room while they eagerly looked for eggs and their baskets.  Jace was ecstatic to find a toy cap gun in his (which I'm already regretting) and Brooke was super happy about all the treats and about finding Beauty & The Beast in hers.  The lessons at church were wonderful and now the kids are running around the house like crazy little bandits high on peeps.  :)  Their favorite Easter game is called "hide the peep".  It's pretty self explanatory.  I hide 2 marshmallow peeps in a room and they look for them.  We got bored last year and had leftover treats so I did that one day.  Jace remembered and wants to play it everyday.  He's been reminding me all year that he wants to play that at Easter time.  I guess it's a new tradition. ... until they get too old to like peeps.

Hopalooza

Our ward had a 'Hopalooza' Easter party a few days ago.  The kids entered the art contest.  They created an art piece of what they think the Easter bunny looks like.  I looked at some cute crafts online and let them choose the one they wanted to do.  They both did AWESOME - I definitely have two little artists on my hands.  I helped with some of the cutting and pasting but they did most of it on their own.  I was so proud of them.  They were both SO excited to bring their projects because they both KNEW that they were going to win.  When we got there they had some really cute Easter themed obstacle courses.  For each one you completed you got an Easter egg filled with treats.  We had a super yummy dinner, they auctioned off some Easter baskets to help fund girls camp and then they announced the winners of the kid's art contest.  Brooke was off running around with Katherine but Jace was front and center eager to see the results.  As I got closer I noticed that they had set aside about 5 bunnies - one being Brooke's.  Poor Jace - I knew I was going to have to do damage control.  When they announced Brooke's as being one of the winners Brooke excitedly ran up to collect her pink chocolate bunny.  Jace kept holding up his bunny for them to see and when they were done his face dropped and he looked so disappointed.  He collected his chocolate egg for entering and I went to give him a hug.  He clung to me and started bawling, burying his head in my chest..  He's so competitive and hasn't learned the concept of loosing with dignity and being a good sport.  Then he looked up and in between tears and gasps said "It's YOUR fault mom."  I almost started laughing that he blamed me for his bunny.  "You made me do an ugly bunny.  You kept telling me it was good and you lied."  I told him I liked his a lot but it just depends on what the judges like the best to be the winner.  I felt bad for him.  He soon forgot about it and sat down to eat his dinner and have an oreo cupcake.  Loosing stinks!  I was proud of both of my kids for doing such a fantastic job on their bunnies.

As we left that night Jace had a basket filled to the brim with plastic Easter eggs full of treats. Brooke's was lost. We searched for it in the dark and finally found it ... but it was empty. Craig gave me the look .. like crap someone took all her eggs but when he told her he found her basket and showed it to her she giggled and laughed and said "Thanks daddy - I LOVE you!!" She wasn't sad to see no eggs. Craig asked Jace to look at his basket and then to look at Brooke's basket - which had her little pink chocolate bunny and that was it... and he said "Hers is STILL better." The grass is always greener on the other side I guess. Jace's glass was half empty today. He did decide to share some of his treats with Brooke though and that made me happy. This week we will be working on being more positive and appreciative at the Brammer house.

My two little bunnies with their Easter Bunny Art projects.

Jace's colorful bunny.  Isn't it cute!?  I LOVED it.
Brooke's winning fuzzy bunny.  We traced her hand prints and cut them out for the grass.
She did all the painting on her own.

Wet N' Wild

Last Saturday the IWFC club had a family field trip to Wet n' Wild water park. It was super fun. It's not even that far away from where we live ... like maybe 15min. drive. I thought about getting a season pass but decided not to since we'll be out and about during the summer months. Plus, Brooke is too short to go on the big rides so we would all just be stuck at Boogie Board Beach which is fun but not nearly as fun as Mammoth Falls. I talked Jace into going on that one with me. The falls drops guests 57 feet before the raft goes vertical, shooting up a wall, then falling back to experience weightlessness before arriving safely to the calm waters below. Craig was very frustrated because Jace was super excited to go on all the 'big' rides with daddy but after waiting in line for 20min to go on Desert Racers they got to the top and he found out that he had to go by himself and Jace freaked out and wouldn't go. Then he didn't want to go on ANYTHING. I finally got him to go with me on Mammoth Falls because we could go together and then he got a little braver and wanted to go on some of the other slides. We also loved the wave pool. The water was pretty cold but it felt nice with the weather being 100+ degrees. Brooke had a blast playing with Katherine and they all had fun taking turns wearing my big floppy hat. Even though we sun screened like crazy I still ended up getting burned a little. It was such a fun place to spend with daddy on one of his last weekends here. On the way home at 5:30pm the kids fell asleep and were out for the night. The sun sure zapped every one's energy. Craig and I stopped at Buffalo Wild Wings and got some dinner. Wings are so yummy. I used to think it was total man food but I LOVE them now. Fun day!

Brookie and Daddy playing at Boogie Board Beach.

Mommy & Brookie ready for a fun day!

Brooke at the Wave pool.  She got knocked down more than a few times.

Jace LOVED the Wave pool.  He liked crashing into the waves and going to the deep end.

The View from the top of Mammoth Falls water slide.

I LOVE this picture.  The look on both of my boys faces while we head down Mammoth Falls 57ft. drop - priceless.  Sorry about the water drops and blurriness - we were going pretty fast.

Making faces and taking an ICEE break.

Family fun at Wet n' Wild.

The kids loved playing with my floppy hat.  Brooke played with Katherine the WHOLE time.  I'm sad that they are moving soon ... but that's what happens when you go to graduate school.

Authentic Mexican Dishes

First of all, I got this recipe from my friend April.  Her husband is Mexican and she learned how to make this from his grandmother so it is VERY authentic!  Craig's fav is Mexican food and since he won't be seeing anything like it in Peru for the next few months I decided to learn how to make it for him.  Some of the ingredients will need to be purchased from a Mexican market.

Enchiladas:

2 cups home made Red Enchilada Sauce
1/2 cup vegetable oil or fat
1/4 of an onion/ diced
1 small bag white corn tortillas (32 - 36)
2 lbs. Mexican made Asadero cheese/ grated

Heat oil over stove top on medium/high heat in a large frying pan.  Slightly fry corn tortillas on each side.  Place them on a plate and cover with a paper towel so they don't dry out.  Fry all of the tortillas in the bag and place them on top of each other with a paper towel in between.  Dip the tortillas into the Red Enchilada Sauce and fill with cheese and onion.  Roll up and place in a 13x9 pan.  Continue dipping and filling tortillas until your pan is full - make sure they are squeezed tightly together.  Top with lots of cheese and the remainder of the Red Enchilada Sauce.  Cover with plastic wrap and heat on high in microwave for 5min or until cheese is melted.  They can be baked in the oven as well but they tend to dry out that way.  Serve.

Red Enchilada Sauce
(makes 3 batches)

6 Pasilla Ancho Chile pods
6 New Mexico Chile pods
6 California Chile pods
6 Mulato Chile pods
4 Laurel leaves (bay leaves)
6 cloves of garlic
1T salt
2T vegetable oil or fat

Wearing a plastic glove, de-stem and de-seed all of the chile pods.  Boil water and add all of the ingredients.  Cover and boil until the chile pods are all soft.  This will take 35-45 min.  Take water from pot and fill blender half way.  Add softened chiles, garlic, and laurel leaves.  Blend until smooth.  Add oil to large frying pan or pot and heat on medium- high.  Pour enchilada sauce through a strainer into the oil.  Simmer on stove to thicken.  Add salt to taste.  Distribute 2 cups each into freezer safe containers.  They can freeze for months.  When you are ready to use it take it out of the freezer and de - thaw it in a pot of cold water for a few hours.

Spanish Rice

1 tomato
1/4 onion/ minced
2 garlic cloves/ minced
2 cups uncooked rice
4 cups water
1T oil
3 tsp. tomato bouillon

Saute minced onion & garlic.  Add rice and let it brown.  Add tomatoes and water.  Let it come to a boil.  Add bouillon and stir.  Cover rice and put on lower heat.  Simmer 20 min or until water evaporates.  Optional garnish of chopped cilantro.

Fresh Salsa (Brammer Recipe)

4 Roma ttomatoes/ diced
1/3 onion/ diced
2 garlic cloves/ minced
2 T vinegar
1 T lime juice
1 T lemon juice
1 tsp. sugar
salt to taste
chopped cilantro to taste

Chop all produce into tiny pieces, add other ingredients, mix, and enjoy.

Scottsdale Culinary Festival

What a fantastic family day! Craig has been looking forward to the Scottsdale Culinary Festival since hearing about it from another student a month or so ago. He is totally a lover of good food. When the weather channel said rain and low 60's we were pretty bummed out. We decided to dress warm and tough it out and I'm so glad we did because it was such a fun day. This is how it worked - You pay a $10 entrance fee then put money on a GAP card to use at all the booths. There were 70+ restaurant booths that sold small entrees, side dishes and desserts for $5 and under. We tried so many different places that were SO yummy. The kids got pizza from Grimaldis Coal Brick Oven Pizzeria. I had a bite and it was to die for. However, after trying an assortment of different foods our favorites went to Roka Akor Sushi & Steak's flat iron steak & fried zucchini. I also really liked the New Orleans Beignets from the Grand Lux Cafe. Later I realized that the interestingly yummy sauce was actually Jack Daniels Creme Anglais Sauce.... OOops. It definitely wasn't cooked out. I guess I won't be enjoying that anymore. Honorable mention went to the street tacos, crab filled Spanish's peppers, and gelato. The atmoshere was fun. They had live music and dancing. There were some families but was mostly populated with lots of trendy mid-twenty to mid-thirty single crowd tyring to pick up on each other. I laughed at the girls who still chose to sport their mini skirts and tiny tops even with the unusual inclement weather. There were several roped off drinking areas but when we weren't eating you could find us at The Family Zone. There they had characters doing face painting, bounce houses, games, kid snacks, and balloons. Jace & Brooke especially loved the bounce house. Jace reminded me that we need to set up our bounce house at home .. the one that Nani & Grandpa got them for Christmas a few years ago. I haven't set it up since moving. I guess I need to find it in the garage. We stayed for about 5 hours then headed home right before another big storm started but not before grabbing some delicious Italian Gelato for the road. So GOOD! Actually we were quite lucky with the weather and came at the perfect time ... we didn't get rained on once. On the way home we saw a beautiful rainbow. What a perfect day!

Craig enjoying Roka Akor Steak - I tried some Indian from Bombay Spice ... it was okay.  It think it was my least favorite of the day.  Not that I don't like Indian food because I do.

Craig and I enjoying our New Orleans Beignets.  We tried for a family picture but failed.  The kids kept getting distracted and would run off.

They did sit still while eating their yummy pizza.  Eating time is awesome because those little mouths are busy chewing and forget about being loud.  Here is Brooke getting her face painted.

We ran into our good friends April & Vicente Armendariz & their twins Bryce & Katherine.

Jace got a batman painted on his hand.  Brooke got a heart & rainbow on her cheek.

Bouncing away...

Jace was a grouch when they closed the bounce house down at 5pm.
The 'stink' face returns! lol

Mommy & Brooke

Stopping for Italian Gelato.  Hmmm ... what to choose??

How about Snickers/Cake batter, Strawberry/Lemon, Oreo/Mint, & Pineapple/Mango.
I'll let you guess who chose what.
