Healthy Snack Balls


These may not look appetizing but they are delicious and super nutritious as well. They taste a lot like no bake cookies but are full of omega-3's,fiber,protein,and healthy fats. I actually encourage my kids to eat them. I love sending them to school as the 'treat' in school lunches or for after school snack. Ty loves them just about anytime and always asks for "more,more,more!"


Snack Balls:
2 cups oats, 1 cup flaxseed meal, 2/3 cups mini chocolate chips, 3T chia seeds, 1 to 2 cups toasted coconut (optional), 1/4 cup toasted pumpkin seeds(optional), 1 cup peanut butter or almond butter, 2 T coconut oil, and 2/3 cups local honey.  Mix first six ingredients together then add  the nut butter, coconut oil, and honey. Mix well. Freeze for 20 minutes. Take out and roll into mini balls. Keep in refrigerator until ready to eat. Yay for healthy, yummy, snacks!!
